What's the difference compared with Sunset Yellow coloring?
Tarte au Citron is a brighter, more lemony yellow, while Sunset Yellow is a warmer, richer yellow. The two work well together for fruity gradients.
Can it be used for macarons?
Yes, either mix a small amount into the meringue before macaronage, or apply it to the surface of baked shells with a fine brush using diluted paint.
Is the pigment heat-resistant?
Stability is better at low temperatures (meringues). For biscuits baked at high temperatures, apply royal icing after baking instead.
