Polishing Spray
Edible glaze and metallic sprays
Gold, silver, rose gold, and colored edible glaze sprays: the glossy or metallic finish that can be sprayed in seconds onto entremets, chocolates, and decorations.
Add gloss, metallic finishes, and pearlescence
The colored edible glaze spray deposits an even glossy coating on fondant, chocolate, or set cream. The metallic versions (gold, silver, rose gold, black) transform a decoration into a ceremonial centerpiece: toppers, figurines, borders. The pearl finish gently adds a pearlescent sheen to light colors without masking them. A 100 to 150 ml format covers several cakes.
How to spray successfully
Shake thoroughly, then spray 20-25 cm to the surface, using short, crisscrossing passes, over a protected work surface (the mist travels far). Two thin coats are better than one thick coat that runs. The film dries within a few minutes at room temperature. On a cold surface taken out of the freezer, first allow the condensation to evaporate.
Frequently asked questions
Edible glaze spray or velvet spray?
The edible glaze gives a smooth, glossy or metallic finish; the velvet spray creates a matte peach-skin effect on frozen entremets. Two contrasting and complementary finishes.
Which surfaces does the edible glaze adhere to?
Fondant, chocolate, set icing, dry meringue. On wet fresh cream, the film does not adhere well.
Is the metallic finish edible?
Yes, these sprays are formulated with approved food colorings for use as a surface decoration.
