Gâteau de Savoie is one of the oldest French sponge cakes, dating back to the 14th century and the court of the Count of Savoy. Made without fat, it relies entirely on incorporating air through the beaten egg whites, giving it its characteristic cloud-like texture. Its success depends on gently combining the ingredients and following the baking instructions: do not open the oven at the beginning of baking, or it may collapse. A little lemon zest is all it takes to flavor it.
Its cloud-like texture comes solely from the egg whites beaten until stiff: it contains no fat. Gently folding in the egg whites and baking without opening the oven at the beginning of baking are crucial.
