Number Cakes and Personalized Cakes

The number cake has been one of the most popular formats since 2018: a biscuit cut into the shape of a number (1, 2, 3...) and covered with whipped cream, fresh fruit, macarons, and flowers. Patissland offers plastic food-safe number templates for cutting the biscuit (3 to 5 numbers per set, 25 to 35 cm high). Complete them with letter cutters for name number cakes (children's birthdays, personalized weddings).

Fondant and Isomalt Letters

2 techniques for creating decorative letters. Fondant: roll the fondant out to 3 mm, cut it with an alphabet cutter, and leave it to dry for 24 hours in the open air to harden. Coloring is possible with gel food coloring. Isomalt: pour melted sugar into an alphabet silicone mold, then cool and unmold after 30 minutes. Transparent or colored crystal effect, with maximum shine. More technical, but visually spectacular.

Engraved Stamps and Imprints

Alphabet stamps make it possible to imprint fondant while it is still fresh: a name, message, or wording. Heights of 1 to 3 cm for decorative letters, and 5 to 10 cm for main inscriptions. Various typefaces: script (handwritten), serif (classic), and sans serif (modern). Apply to freshly rolled fondant, removing the stamp gently to preserve a crisp imprint.

What letter height should I choose for a cake?

Standard dimensions vary according to the intended use. Name written on a birthday cake: letters 2–4 cm high. Main wedding message (Mr & Mrs, Sweet 16): letters 5–8 cm high. Large cake topper (number cakes, tall wedding cakes): letters 10–15 cm high. As a general rule, the letter height should represent 10–15% of the cake's diameter.

Fondant or isomalt—which should I choose for letters?

Fondant: easy to work with, customizable coloring, matte finish or luster dust finish, but it may soften in the refrigerator (humidity). Isomalt: transparent or colored crystal effect, maximum shine, resistant to humidity, but more technically demanding (cooking at 165°C, handling while hot). Professionals combine the two depending on the desired effects.

How far in advance should I prepare the letters?

Fondant letters should dry for 24–48 hours in the open air to harden and remain upright when placed on the cake. Isomalt letters harden in 30 minutes, but must be stored in an airtight container with desiccant to prevent moisture. Prepare the decorations the day before for a cake ready to assemble on the day of the event.
