Number cakes and personalized cakes

The number cake has been one of the most popular styles since 2018: a sponge cake cut into the shape of a number (1, 2, 3...) and topped with whipped cream, fresh fruit, macarons, and flowers. Patissland offers number templates made from food-safe plastic for cutting the cake (3 to 5 numbers per set, 25 to 35 cm tall). Complete the look with letter cutters for name number cakes (children's birthdays, personalized weddings).

Sugar paste and isomalt letters

2 techniques for making decorative letters. Sugar paste: roll out the paste to 3 mm, cut out letters with alphabet cutters, and leave to dry in the open air for 24 hours to harden. Gel food coloring can be used. Isomalt: pour melted sugar into a silicone alphabet mold, then cool and unmold after 30 minutes. Clear or colored crystal effect, maximum shine. More technical, but visually spectacular.

Stamps and engraved impressions

Engraved alphabet stamps let you imprint fresh sugar paste with a name, message, or inscription. Heights of 1 to 3 cm for decorative letters, 5 to 10 cm for main inscriptions. A variety of fonts: script (handwritten), serif (classic), sans serif (modern). Apply to freshly rolled sugar paste, then gently remove the stamp to keep the impression crisp.

How tall should the letters on a cake be?

Standard sizes depending on use. Name on a birthday cake: letters 2-4 cm tall. Main wedding message (Mr & Mrs, Sweet 16): letters 5-8 cm tall. Large cake topper (number cakes, tall wedding cakes): letters 10-15 cm tall. General rule: the letter height should be 10-15% of the cake's diameter.

Sugar paste or isomalt: which should you choose for letters?

Sugar paste: easy to work with, choose your color, matte finish or luster dust, but it can soften in the fridge (humidity). Isomalt: clear or colored crystal effect, maximum shine, moisture-resistant, but more complex to work with (cooked to 165°C, handled while hot). Professionals combine both depending on the desired effects.

How long before the cake should you prepare the letters?

Sugar paste letters need to dry for 24-48 hours in the open air to harden and stay upright when placed on the cake. Isomalt letters harden in 30 minutes, but must be stored in an airtight container with a desiccant to prevent moisture. Prepare the decorations the day before so the cake is ready to assemble on the day.
