The Sicilian cannolo is one of Italy’s most iconic pastries: an ultra-crispy fried pastry tube filled to order with sweet ricotta cream and sprinkled with crushed pistachios and chocolate chips. The pleasure lies in the contrast between the crisp shell and the cool, melting center. In this alcohol-free version, traditional Marsala wine is replaced with a little white vinegar, which gives the pastry the same crispness. Fill just before serving so the shells remain perfectly crisp.
