Dorayaki is the Japanese treat made famous by manga: two small, soft, golden pancakes with a lovely domed shape, enclosing a generous layer of sweet red bean paste, known as anko. Fragrant with honey, the batter stays incredibly soft. Easy and quick, dorayaki can be enjoyed by hand at any time and lends itself to countless delicious variations, from red bean paste to chestnut cream or chocolate.
