Breton far is a traditional dessert from Brittany, somewhere between a custard and a clafoutis. Made with eggs, milk, flour, and sugar, it is traditionally filled with prunes. In this alcohol-free version, the prunes are rehydrated in warm tea. Its dense, melt-in-the-mouth texture and simplicity have made it a beloved classic of Breton home cooking.
The key to success is a perfectly smooth batter and a sufficiently long baking time that sets the custard all the way through while browning the surface. The prunes, rehydrated beforehand, remain soft and infuse the batter with their flavor.
