- Flat assembly: place the ring on the serving dish or a baking sheet covered with parchment paper, then fill with successive layers (biscuit, crémeux, glaze).
- Unmolding: line the inside with a strip of acetate for a clean edge, especially with frozen or mousse-based preparations.
- Baking: suitable for baking shortcrust or sweet pastry thanks to its low height; place directly on a baking sheet.
- Freezing: the ring can go from the freezer to the work surface without deforming, making it practical for entremets prepared in advance.
