Please note: Lilac is highly sensitive to the base used. For a pastel finish close to a lavender shade, first color a small amount of white sugar paste, then incorporate this colored paste into a larger amount of white paste. This stepwise dilution prevents overdosing, which can cause the shade to shift toward an overly saturated mauve.

Why does Lilac change in the light?

Can this gel be used in white chocolate?
As this gel is water-soluble (water-based), it is not recommended for coloring large quantities of pure chocolate, as it could cause the mixture to seize due to incompatibility between water and fat. For chocolate, use dedicated oil-soluble colorings instead. For small details or a cream-rich ganache, this gel can be used carefully in very small amounts.
