Pavoni red velvet effect spray is a cocoa butter-based surface colorant that gives entremets, mousse cakes, individual desserts and cupcakes a matte, velvety finish in just a few seconds. As with the entire Velvet Spray range, the effect only works on an item straight from the freezer: the thermal shock instantly sets the droplets into a fine matte texture.
