Your questions, our advice
What surface should velvet spray be applied to?
Apply the spray to a thoroughly frozen dessert, freshly unmolded, such as an entremet or mousse. The cold surface instantly crystallizes the sprayed cocoa butter into a fine matte layer that mimics velvet.
Should you wait before serving a dessert treated with velvet spray?
Yes, we recommend letting the dessert thaw in the refrigerator for at least one hour after application, to allow the center to return to its normal texture.
Does this green spray require a children's warning on the label?
Yes: the green shade in this range combines quinoline yellow (E104), tartrazine (E102) and Brilliant Blue FCF (E133). The first two colorants are subject to the European regulatory warning regarding children's activity and attention, which must be kept on the product label.
