Violet Velvet-Finish Spray 250 ml

Velly Food Violet spray applies a saturated finish to frozen entremets. It is suitable for blackcurrant, lavender, or blackberry creations, adding a fairytale touch to Provence-style birthday cakes or wedding cakes, which are less common than red or pink shades.

Features

  • Capacity: 250 ml, ready-to-use aerosol
  • Dominant pigments: azorubine (E122) and brilliant blue (E133)
  • Gluten-free
  • Suitable for frozen entremets, frozen yule logs, mousses, bavarois, and pavlovas
  • One can covers an average of 4 to 6 18 cm entremets with a standard finish

Instructions

  • Smooth the surface of the entremets before freezing
  • Freeze at a minimum of -18°C for at least 4 hours
  • Shake the can for 30 seconds, then remove the entremets from the freezer just before use
  • Spray from 20–30 cm away in a circular motion, applying successive thin layers
  • Return to the refrigerator for 30 minutes before serving

Please note: the formula contains azorubine (E122), an azo dye; check the regulatory statements on the label of the batch received before any marketing highlighting children. Store the can away from heat, upright, with the valve facing upward.

Frequently Asked Questions

Why freeze the entremets before applying the violet velvet finish?

The coating crystallizes on contact with the cold. Without freezing at a minimum of -18°C, the colored cocoa butter will run instead of forming the powdery velvet texture.

Which flavors work with the violet velvet finish?

Blackcurrant, blackberry, lavender, or tart red fruits: the violet shade visually complements these flavor families, which are less common than classic red.

How long can a coated entremets be kept before serving?

24 to 48 hours in the refrigerator, depending on the recipe, once the entremets has thawed and the finish has stabilized.
