ProGel’s signature advantage: it’s a general-purpose coloring for water- and oil-based mixtures, working just as well in water-based mixtures (royal icing, water-based glazes, syrups, meringues, macarons) as in fat-based mixtures (buttercream, ganache, tempered chocolate, pastry fondant, sugar paste). One tube is enough for the entire range of pastry applications, whereas other food colorings require separate ranges depending on the mixture. The concentrated 25 g format covers 30 to 50 batches, depending on the desired intensity.
