How can you prevent sugar paste from cracking when covering a cake?
Knead the sugar paste for 2 to 3 minutes to soften it, roll it out to 4 or 5 mm thick, and smooth it from the center toward the edges without trapping air bubbles. If it cracks, smooth it with your finger and a drop of water.
Electric Yellow tip?
Electric Yellow is highly saturated: test the shade on 50 g before covering the whole cake.
