Frequently asked questions
Valrhona cocoa powder vs melted chocolate?
Cocoa powder provides an intense cocoa flavor without the fat from cocoa butter. Ideal for: dry biscuits, ganaches that need to remain fluid, final dusting, or drinks. Melted chocolate provides flavor + fat + sugar. The two are not interchangeable in a recipe.
How do you use cocoa powder in a sponge cake?
Replace 20–30% of the flour with Valrhona cocoa powder. Example: for 200g of flour, use 160g of flour + 40g of cocoa powder. Sift them together before incorporating. To intensify the flavor further, also add 30–50g of melted dark chocolate to the recipe.
How does it differ from supermarket cocoa powder?
Valrhona cocoa powder is made from beans selected for their aromatic profile, precisely ground and defatted. It has a more intense aromatic profile, more pronounced bitterness, and deeper color. Industrial brands often add alkalizing agents to soften the flavor, which flattens the profile. For premium dusting or cocoa macarons, the difference can be seen and tasted.
Should Valrhona cocoa powder be alkalized?
No, this is already done to a moderate degree with Valrhona. Alkalization (the Dutch process) reduces the natural acidity of cocoa and improves its dispersion in water. Valrhona cocoa powder offers a carefully developed balance between aromatic intensity and ease of use, without excessive alkalization that would mask the cocoa notes.
