How do I get even coloring for a Rainbow Cake?
Use about 1 g of gel per 250 g of mixture for each layer, and follow the spectrum order from bottom to top for a harmonious result.
Does this gel work with all mixtures?
Yes, ProGel is an all-purpose water- and oil-compatible gel: it colors both water-based mixtures (royal icing, icings, meringues) and fat-based mixtures (buttercream, ganache, tempered chocolate, fondant, sugar paste).
