- Place macarons, cocktail bites, and petits fours directly on the surface, or put an individual paper liner under each item for a more polished look.
- Allow for approximately 50 to 60 macarons, 30 to 40 mini pastries, or 80 to 100 mini canapés per tray, depending on how densely they are arranged.
- Refrigeration (0 to 6 °C) is possible if preparing the day before; however, this should be reserved for cold foods, never hot dishes or prolonged freezing.
- For transport, stack up to 3 or 4 loaded trays, reserving the top of the stack for the most delicate items.
