Pavoni red velvet effect spray is a cocoa butter-based surface colorant that gives entremets, mousse cakes, individual desserts, and cupcakes a matte, velvety appearance in just a few seconds. As with the entire Velvet Spray range, the effect occurs only on a piece coming straight from the freezer: the thermal shock instantly sets the droplets into a fine matte grain.
