How can you prevent sugar paste from cracking when covering a cake?
Knead the paste for 2 to 3 minutes to soften it, roll it out to a thickness of 4 or 5 mm, and smooth from the center towards the edges without leaving any air bubbles. If it cracks, smooth it with your finger and a drop of water.

Urban Taupe works best at a slightly cool temperature: do not knead too much to prevent it from softening.
