Pavoni’s Absolute Brown water-soluble powder food coloring, developed in collaboration with chef Emmanuele Forcone, creates a deep, even brown in water-based preparations. Packaged in a 50 g jar, it is suitable for macarons, glazes, creams and sugar paste. It is not suitable for chocolate or fats.

How can I prevent a dull or grayish brown?
Gradually incorporate the food coloring into a light-colored base and let the shade develop for a few minutes before adjusting it: this prevents it from turning gray.
Can this food coloring be used in chocolate or a fatty preparation?
No. This food coloring is water-soluble: it is formulated for water-based preparations (glazes, creams, sugar paste). For chocolate or cocoa butter, an oil-soluble food coloring is required.
How do I incorporate the food coloring for an even color?
Dilute a small amount in a little water or syrup before adding it to the preparation to prevent lumps and ensure even distribution.
