Frequently asked questions

How many cake pops can I coat with one 125 g bag of White?

Approximately 15 to 18 classic cake pops (an average of 8 g of wafers per cake pop). For an 18 to 20 cm drip cake, plan on 80 to 100 g instead.

How can I thin wafers that are too thick after melting?

Add 1/2 teaspoon of neutral vegetable oil (sunflower or grapeseed) per 125 g, never water: the mixture would seize instantly.

Can I color these White Candy Melts myself?

Yes, but only with an oil-based food coloring. Gel or water-soluble liquid coloring makes the wafers seize on contact.

What is the difference between Wilton White Candy Melts and couverture chocolate?

Candy Melts are a coating mixture made with sugar and vegetable fat, without cocoa butter: they melt more easily (no tempering required) but do not have the flavor profile of couverture chocolate.
