Your questions, our advice
What surface should the velvet spray be applied to?
The spray is applied to a thoroughly frozen preparation, just unmolded, such as an entremet or mousse: the surface cold instantly crystallizes the sprayed cocoa butter into a fine, matte coating that imitates velvet.
Should you wait before eating an item treated with velvet spray?
Yes, it is recommended to leave the item to thaw in the refrigerator for at least one hour after application, allowing the center of the preparation to return to its normal texture.
Does this yellow spray require a child safety warning on the label?
Yes: the yellow shade in this range uses quinoline yellow (E104), a colorant subject to the European regulatory warning about children's activity and attention, which must be kept on the product label.
