Kunafa, or knafeh, is one of the jewels of Middle Eastern pastry: fine strands of kadaïf dough, golden and buttery, filled here with a smooth pistachio cream, then soaked in an orange blossom–flavored syrup. This dessert plays on the irresistible contrast between the golden crispness of the top and the soft, fragrant center. Carried along by the pistachio craze, kunafa has become one of the stars of social media and festive tables. It is served warm, generously sprinkled with crushed pistachios.
