This water-based food colouring is designed for water-based pastry mixtures: royal icing, water-based glazes, syrups, meringues, and macarons. It naturally finds its place on royal icing biscuits, high-end autumn wedding cakes, and wedding anniversary cookies (ruby anniversary).

Directions for use

  • Shake the bottle before use and add to a base at room temperature (18 to 22°C)
  • Typical dosage: 2 to 4 drops per 250 g for a pastel shade, up to 20 drops for a dark shade
  • Mix, then let stand for 15 minutes before adjusting the shade if needed
  • To colour chocolate or ganache, use the Colour Mill oil-soluble range, not this water-soluble colouring

Please note: this colouring is water-based: it must never be added to melted chocolate or ganache, as it may cause the mixture to seize.
