Pavoni's Absolute Lemon Yellow water-soluble powder food coloring, developed in collaboration with chef Emmanuele Forcone, provides a bright, even lemon-yellow shade. Packaged in a 50 g jar, it is suitable for macarons, icings, sugar paste, and sugar decorations made with water. It is not suitable for chocolate or fats.

Is this yellow suitable for mirror glaze without a white base?
It produces better results on a neutral or lightly whitened base (modern food-grade white coloring based on E170 and glycerol E422) for a bright, even shade.
Can this food coloring be used in chocolate or a fatty preparation?
No. This food coloring is water-soluble: it is formulated for water-based preparations (icings, creams, sugar paste). For chocolate or cocoa butter, an oil-soluble food coloring is required.
How much should be used for an intense shade?
This food coloring is highly concentrated: start with the tip of a knife or a few tenths of a gram, then gradually adjust to the desired intensity, within the regulatory dosage limit indicated on the label.
