COLOUR MILL

Colour Mill Water-Soluble Sage Colourant

Sage shade, 20 ml bottle for water-based mixtures

Colour Mill Water-Soluble Sage evokes the leaf of the common sage plant and the aromatic herb found in gardens. This water-based food colouring is designed for water-based baking mixtures: royal icing, water-based glazes, syrups, meringues, and macarons. It naturally suits royal icing biscuits, rustic wedding cakes, nature-themed cookies, and wellness creations.

Features

  • Concentrated water-soluble food colouring for water-based mixtures: royal icing, water-based glazes, syrups, meringues, and macarons
  • Not compatible with fat-based mixtures (chocolate, ganache, cocoa butter): water causes chocolate to seize
  • 20 ml squeezable dropper bottle for precise dosing
  • Shade remains stable after royal icing has dried completely (approximately 24 hours), without any change in tone
  • Gluten-free, lactose-free, egg-free, peanut-free, and soy-free; suitable for vegetarian and vegan diets

Directions for use

  • Shake the bottle before use and add to a mixture at room temperature (18 to 22°C)
  • Typical dosage: 2 to 4 drops per 250 g for a pastel shade, up to 20 drops for a dark shade
  • Mix, then let stand for 15 minutes before adjusting the shade if needed
  • To colour chocolate or ganache, use the Colour Mill oil-soluble range, not this water-soluble colouring

Please note: this colouring is water-based: it must never be added to melted chocolate or ganache, as it may cause the mixture to seize.

Frequently asked questions

Does the colour remain stable after the icing has dried completely?

Yes, the shade remains stable after the royal icing has dried completely, approximately 24 hours, making it suitable for decorated biscuits sold several days after they are made.

What dosage should I use for a highly saturated shade?

Start with 5 to 10 drops per 250 g of mixture and adjust in increments of 2 to 3 drops until you reach the desired shade, allowing the mixture to rest between additions.

Does the 20 ml bottle have a dropper?

Yes, the squeezable cap includes a dropper opening: a simple squeeze dispenses one precise drop.
