Directions for use
- Smooth the entremet surface perfectly before freezing: the velvet finish reveals the slightest imperfection.
- Freeze the entremet at a minimum of -18 °C for at least 4 hours.
- Shake the can for 30 seconds before use, and remove the entremet from the freezer just before spraying.
- Spray from a distance of 20–30 cm, using a circular motion and successive thin layers spaced 5 to 10 seconds apart.
- Refrigerate for at least 30 minutes before serving to stabilize the finish.

Spray in very thin layers: an overly saturated shade will detract from the desired delicate pastel effect.

The velvet spray crystallizes instantly when it comes into contact with a very cold surface. Without prior freezing at a minimum of -18 °C, the product runs and does not form the characteristic powdery texture.
