ProGel's signature advantage: it is a general-purpose water- and oil-based coloring that works equally well on water-based preparations (royal icing, water-based glazes, syrups, meringues, macarons) and fat-based preparations (buttercream, ganache, tempered chocolate, pastry fondant, sugar paste). One tube for the entire pastry range, whereas other colorants on the market require two separate ranges, one oil-soluble and one water-soluble.
