Studded relief for contemporary entremets
The Pop mold creates a square surface covered with raised studs, a design by Emmanuele Forcone, Italian pastry chef and member of the team that won the 2015 Pastry World Cup, published by Pavoni. It allows clean unmolding from a single cavity for a contemporary-designed entremets.
