12-Mango Trompe l'oeil Mold - PX43104
Cédric Grolet Collection for Pavoni Italia
The mango is distinguished by its asymmetrical shape and slightly curved tip. The PX43104 mold from the collection designed by Cédric Grolet reproduces this profile in 12 professional-sized cavities, creating individual entremets with a faithful rendering of the exotic fruit.
Technical specifications
Uses
- Individual mango entremets: mango-passion fruit gel insert, light mango mousse, almond dacquoise base
- Frozen inserts for plated desserts
- Orange mirror glaze base finish
- Yellow and red gradient velvet spray finish applied with an airbrush to recreate the fruit's skin
Please note: freeze completely before unmolding: unset mousse will deform and lose the characteristic shape of the mango. Hand washing with warm, soapy water is recommended to preserve the molding detail; dishwasher use is permitted.
