Colour Mill Water-Soluble Latte evokes a latte coffee and cappuccino foam. This water-based food colouring is designed for water-based pastry mixtures: royal icing, water-based glazes, syrups, meringues and macarons. This shade is particularly sought after for earthy-themed royal icing wedding cakes and wedding anniversary cookies (10 to 15 years).

- Concentrated water-soluble food colouring for water-based mixtures: royal icing, water-based glazes, syrups, meringues and macarons
- Not compatible with fat-based mixtures (chocolate, ganache, cocoa butter): the water causes chocolate to seize

- Shade remains stable after royal icing has dried completely (approximately 24 hours), without any change in tone

Directions for use
- Shake the bottle before use and add to a mixture at room temperature (18 to 22°C)
- Usual dosage: 2 to 4 drops per 250 g for a pastel shade, up to 20 drops for a dark shade
- Mix, then let stand for 15 minutes before adjusting the shade if needed
- To colour chocolate or ganache, use the Colour Mill oil-soluble range, not this water-soluble colouring
Please note: this colouring is water-based: it must never be added to melted chocolate or ganache, as it may cause the mixture to seize.

Can this colouring be used in melted chocolate?
No: this colouring is water-soluble and water-based. In chocolate or ganache, the water causes the fat to seize. For these mixtures, use the Colour Mill oil-soluble range.
Should the dosage be adjusted according to the amount of mixture?
Yes, the stated dosage is for 250 g of mixture: proportionally double or triple the number of drops for larger quantities.
How should the 20 ml bottle be stored after opening?
Close it tightly after each use, store it away from light at between 15 and 22°C, and use it within 12 months to preserve pigment intensity.
