How can I prevent the fondant from cracking when covering a cake?
Knead the fondant for 2 to 3 minutes to soften it, roll it out to a thickness of 4 or 5 mm, and smooth it from the centre towards the edges without leaving air bubbles. If it cracks, smooth it with your finger using a drop of water.
