Pavoni's Absolute Cherry Red water-soluble powdered colorant, developed in collaboration with chef Emmanuele Forcone, provides a vibrant, deep cherry-red shade. Packaged in a 50 g jar, it is suitable for water-based preparations: macarons, icings, creams, sugar paste, and artistic sugar work. It is not suitable for chocolate or fats.

How does it differ from the Bright Red in the range?
Cherry Red has a deeper, slightly purplish shade, close to red fruit, whereas Bright Red is more vivid and luminous.
Can this colorant be used in chocolate or a fat-based preparation?
No. This colorant is water-soluble: it is formulated for water-based preparations (icings, creams, sugar paste). For chocolate or cocoa butter, an oil-soluble colorant is required.
How much should be used for a pronounced shade?
This colorant is highly concentrated: start with a knife tip or a few tenths of a gram, then gradually adjust according to the desired intensity, within the regulatory dosage limit indicated on the label.
