Pavoni's Purple Absolute water-soluble powder colorant, a range developed with chef Emmanuele Forcone, combines two colorants and anhydrous sodium sulfate for a rich, intense purple. Packaged in a 50 g jar, it is suitable for water-based preparations: macarons, sugar paste, creams, icings, and artistic sugar. It is not suitable for chocolate or fats.

No. This colorant is water-soluble: it is formulated for water-based preparations (icings, creams, sugar paste). A fat-soluble colorant is required for chocolate or cocoa butter.
How much should be used for a strong shade?
This colorant is highly concentrated: start with a small pinch or a few tenths of a gram, then gradually adjust according to the desired intensity, within the regulatory dosage limit indicated on the label.
