How to apply them
Sprinkles adhere to a surface that is still fresh: ganache, buttercream, royal icing, or glaze before it sets. On dry fondant, lightly moisten with a brush or use a dab of icing.
For the edge of a layer cake, pour the sprinkles into your palm and gently press them onto the smoothed cream, placing a tray under the cake to catch any excess. Allow approximately 80 to 100 g to cover the base of a 15 cm cake.
