Two to three drops per 100 g of fat are generally enough to achieve the Blue Bell shade in a pastel version. Add it drop by drop and mix before adding more: the intensity increases quickly on a white base.

As an oil-soluble food coloring, Blue Bell is formulated for fat-based preparations: melted white, dark, or milk chocolate, cocoa butter, ganache, and buttercream. It is not designed for water-based preparations such as royal icing or fondant worked with water, where it will not disperse properly: reserve it for fat-based mixtures, especially for soft gradients and romantic wedding cakes.
