Pavoni blue liquid water-soluble food coloring, in a 190 g bottle, is designed for water-based preparations: icings, creams, mousses, sponge cakes, and entremets. Its azo-free formula relies on a single pigment for a powerful, even blue shade. This food coloring is not suitable for chocolate or fat-based preparations.

Is this blue suitable for coloring chocolate?
No. This water-soluble food coloring is intended for water-based preparations only. For chocolate or fat, a fat-soluble food coloring is required.
Does this food coloring contain azo dyes?
No, its formula relies solely on E133 coloring (Brilliant Blue FCF), which is not an azo dye. No child warning is required for this pigment.
How can I shift this blue toward violet or azure?
Combine this blue with Pavoni violet for cooler tones, or with sky blue for lighter shades. Increase the dosage gradually up to a maximum of 16.45 g/kg.
