Storage: lace that is too dry becomes brittle. Store unmolded strips flat in an airtight container with parchment paper, away from moisture, for several weeks before placing them on the cake.

How do you apply the lace preparation to this mat?
Spread the preparation with an offset spatula in a thin, even layer, scrape off the excess, then let it dry in the open air or in a low-temperature oven according to your mix's instructions. Carefully unmold it, starting at one corner, then place the lace on icing that is still slightly tacky or secure it with a light coating of syrup.
How long does the lace keep once unmolded?
