Directions for use
- Perfectly smooth the surface of the entremet before freezing: the velvet finish reveals the slightest imperfection.
- Freeze the entremet at a minimum of -18 °C for at least 4 hours.
- Shake the can for 30 seconds before use, and take the entremet out of the freezer just before spraying.
- Spray from a distance of 20–30 cm using a circular motion, in successive thin layers spaced 5 to 10 seconds apart.
- Return to the refrigerator for at least 30 minutes before serving to stabilize the finish.

Red permanently stains clothing and work surfaces: wear a disposable apron and protect the work area.

Why must the entremet be frozen before spraying?
The velvet spray crystallizes instantly on contact with a very cold surface. Without prior freezing at a minimum of -18 °C, the product runs and does not form its characteristic powdered texture.
What distance should be maintained between the can and the entremet?
20 to 30 cm. If too close, the spray forms droplets; if too far away, crystallization occurs in the air and the color loses intensity.
Is the red suitable for Valentine's Day and Christmas?
