Silikomart's Yellow Velvet Spray recreates the characteristic matte, velvety finish of professional entremets in one step. Sprayed onto a frozen preparation, it instantly sets into a fine coating of colored cocoa butter. Its bright yellow shade is ideal for lemon entremets or spring and sunny themes.

Allergens and use: may contain traces of milk and soy. Spray from approximately 25–30 cm onto a thoroughly frozen, unmolded preparation, using crossed layers, then allow to thaw in the refrigerator before serving.

The spray should be applied to a thoroughly frozen preparation, just unmolded, such as an entremet or mousse: the cold surface instantly crystallizes the sprayed cocoa butter into a fine matte coating that mimics velvet.

Yes, it is recommended to allow the pastry to thaw in the refrigerator for at least one hour after application, so the center of the preparation can return to a normal texture.
