The Winter Mold creates a Christmas tree-shaped cavity in a large-format dessert, in a single 200 mm piece. The flat base is suitable for velvet coating, while the raised tree cavity can be filled with a colored glaze for a sharp contrast between the two textures.

Please note: Unmold the dessert while it is frozen through to preserve the sharpness of the raised tree, then immediately coat the base with velvet spray: the velvet adheres better to a surface that is still cold.
