Usage tips
- Do not fill more than half the depth with raw batter, or approximately 1.5 cm, to prevent overflow during baking.
- For a sponge cake sized to fit the pan, use approximately 600 to 800 g of raw batter; for a thin Joconde-style biscuit, 350 to 450 g.
- Turn the cake out onto a rack immediately after removing it from the oven to prevent steam from softening the biscuit.
- For a rolled cake, roll the sponge while still warm in a tea towel dusted with sugar: a cooled sponge will break when rolled.
Please note: Preserve the non-stick coating by hand-washing in warm water with a soft sponge; avoid metal utensils, abrasive sponges, and the dishwasher, which can shorten its lifespan.

This is not necessary for most recipes. For very sticky or acidic batters, a thin layer of neutral oil or parchment paper can make unmolding easier.
